So we recently started eating meat free on Monday's and it has been pretty hard to find good and healthy vegetarian dinners. I have tried a couple of black bean burgers, and a black bean bake. But we have grown a little tired of the black bean thing. So I branched out and tried something new! (Please keep in mind that Jonathon is a Texas boy and even the idea of eating meat free is a little crazy to him - so I try not to go too far out side the box!) I knew I could cook up something using Quinoa as a base, so I found this recipe on Cooking Light and decided to give it a go! Boy am I glad that I did! It was so good! Jonathon is also a picky eater so I used squash and asparagus and roasted them before adding them into the quinoa and it was yummy!! The homemade dressing and feta almost steal the show! And did I mention the best part? Jonathon approved!! So next time you are looking for a successful meat free Monday try this dish!! (We topped ours with a little bit of Sriracha as well!!)
